An excellent arabica, grown by small cooperatives at very high elevation. The high altitude causes the beans to mature more slowly, resulting in an extremely flavorful cup. After harvest, the beans are sun dried, preserving their flavor and aromatic nuances. In this profile we roast until mid-way into second crack, when the beans are snapping and popping with maximum energy release. When released into the cooling bin, the beans are still actively cracking and a wonderful aroma fills the air.
